This healthy keto spinach quiche is super creamy and suitable for vegetarians. It’s a delicious and super nutritious meal ideal for lunch or dinner and can be stored in the fridge or freezer for meal prep.
If you prefer more meat in your life, try our Quiche Lorraine. It’s loaded with bacon and gruyere cheese.
This Keto Spinach Quiche recipe serves ten. One serving is one slice with 4g net carbs.
Ingredients
- Crust Ingredients:
- 2 cups of Almond Flour
- 1 Egg
- 2 ounces of Butter, melted
- 1 pinch of Salt
- 1 pinch of Pepper, ground
- Filling Ingredients:
- 1 tablespoon of Olive Oil
- 2 cloves Garlic, crushed
- 10 ounces of Baby Spinach
- 4 large Eggs
- 1 cup of Heavy Cream
- 1 teaspoon of Salt
- ½ teaspoon of Pepper, ground
- 4 ounces of Jarlsberg Cheese, shredded
How to Make Keto Spinach Quiche
- Preheat oven to 170C/340F.
- Place all crust ingredients into a bowl and mix well.
- Press into the base and up the sides of your quiche dish.
- Bake for 12-15 minutes. The crust may puff up when cooking, settling down as it cools. Set aside while preparing the filling.
- Place a large frying pan over high heat and add the oil.
- Saute the garlic and spinach with a pinch of salt for 5-8 minutes until cooked. Set the cooked spinach in a colander over the sink or a bowl to drain any excess liquid, and leave for 10 minutes.
- Spread the spinach evenly over the baked crust and sprinkle the cheese over the spinach.
- Add the eggs, cream, salt, and pepper in a large bowl. Mix well.
- Gently pour over the spinach.
- Bake for 25-35 minutes until the center doesn’t jiggle when moved.
- Cut into ten slices and serve immediately.
