These Fruit and Nut Wheels are packed with delicious dried fruits and toasted nuts and seeds. This healthy appetizer or snack recipe makes a fun and delicious addition to any cheese plate or charcuterie board.

Fruit and Nut Rolls Recipe is packed full of plant diversity for a fun vegan or plant-based snack and comes from the book How to Eat More Plants by Dr. Megan Rossi. I was given a copy of the book for review, but all my options are my own.

Besides adding them to a cheese plate, you can enjoy this fruit log as a high fiber snack straight from the freezer or fridge. Or, leave them out to come up to room temperature. They make a great snack for kids or toddlers too!

And these show that plant based doesn’t mean boring!

No, in fact, Dr. Rossi does a delicious job of encouraging her readers to get out and try new things in manageable and attainable ways.

Diversity Diet

She calls it the Diversity Diet. It’s a simple yet revolutionary way of eating that anyone can adopt to enjoy huge health benefits like increased energy, improved mood, and reduced risk of illness. It’s all about eating a wider variety of plant foods — at least 30 different plants per week.

This fact-based guide to plant-based eating explains why adiversediet is the key to better health, and it includes over80 plant-packed recipes! I’ve already made three recipes from the book.

These Fruit and Nut Chews, which you’ll find the recipe a bit lower on the page, the Ultimate Raspberry and White Chocolate Muffins found on page 163 of the book, and Hearty Lasagna from page 239.

And she has super useful tools like the busy people menu plan on page 122, and really, who isn’t busy these days! And the 28-day plant points challenge to help you increase the number of plants you consume in a day in small meaningful steps that are totally do-able!

Healthy mind & body

All of these tips, tricks, facts, and information helps you get a healthier gut which will probably lead to a healthier body and mind.

One other thing I like about this book is that even though she’s encouraging people to eat more plants she isn’t saying to give anything up. Her recipes include meat and fish as well as chocolate. She’s all about adding in more tasty and beneficial plants rather than eliminating foods from your diet.

I really enjoyed reading her book, and I know I’ll continue to enjoy the recipes for years to come. I definitely recommend this one!

How to make

These little fruit + nut wheels are super easy and fun to make. Be sure to scroll down to the printable recipe card for full instructions and ingredient amounts.

Make the fruit paste

Place the apricots and figs in a food processor and blend into a thick paste, scraping down the sides as needed, about 1 to 2 minutes.

Toast the nuts & seeds

Place the pistachios, walnuts, and mixed seeds in a frying pan over medium heat. Toast for 2 to 3 minutes, stirring regularly to prevent burning.

Pro tip: If your nuts and seeds are already toasted, no need to roast them twice. Save yourself some time if you get roasted nuts.

Be careful about how many things are salted. You want mostly unsalted nuts and seeds here. Both for health reasons, too much sodium if all salted, and for taste. A little salt here is yummy, too much and it would be overpowering!

And, I think it goes without saying that these pistachios should be shelled (meaning with no shells on them), but just for clarification, you don’t want shells on the nuts or the seeds. Do yourself a favor and get bags of nuts and seeds that the shells have already been removed.

I found a great selection of ready to use nuts and seeds at Trader Joes.

What kind of seeds should you get? Any kind you like! Or whatever’s in your freezer already. (I always store nuts and seeds in my freezer so they last longer). I used a combination of poppy seeds, sunflower seeds, and sesame seeds in my rolls. You could also use chia seeds, flaxseeds, hemp seeds, pumpkin seeds, onion seeds, or watermelon seeds.

Mix and shape it

Transfer the fruit paste to a large bowl with the remaining ingredients except the shredded coconut.

Now the fun and messy part! Mix with your hands, pressing and turning the mixture repeatedly to help coax it together.

On a clean work surface, lay out a long piece of plastic wrap. Shape the mixture into a log about 2 inches in diameter and 9 inches long.

Sprinkle the shredded coconut onto the plastic wrap and roll the log until coated, pressing the coconut into the sides. If all you can find is sweetened coconut for the outside, feel free to use that.

Wrap the log tightly in the plastic wrap, twisting the ends to make it airtight. Tuck the ends under the log, and place the log in the freezer to harden for at least 4 hours.

To serve, unwrap it while still frozen, and use a sharp knife to cut it into 18 wheels, about ½-inch thick.

Serve these on a cheese plate along with some fig jam and my Blue Cheese with fig preserves and candied pecans. Some other healthy and delicious additions to your appetizer spread are Balsamic Onion Jam, Red Pepper Garlic Dip, Candied Pecans, and Shish*to Peppers.

Ingredients

  • 20 apricots
  • 13 dried figs
  • 1/3 cup pistachios roughly chopped
  • ¼ cup walnuts roughly chopped
  • 2 tablespoons mixed seeds
  • ¼ cup almond meal
  • ¼ cup coconut flakes
  • 1 tablespoon dried cranberries
  • 2 tablespoons unsweetened shredded coconut

Instructions

  • Place the apricots and figs in a food processor and blend into a thick paste. It will take 1 to 2 minutes, and you may need to scrape the sides down.

    20 apricots, 13 dried figs

  • Place the pistachios, walnuts, and mixed seeds in a frying pan over medium heat. Toast for 2 to 3 minutes, stirring regularly to prevent burning. You can skip toasting any seeds or nuts that are already roasted.

    1/3 cup pistachios, ¼ cup walnuts, 2 tablespoons mixed seeds

  • Transfer the fruit paste to a large bowl with the almond meal, coconut flakes, cranberries, and once cooled, the pistachios, walnuts, and seeds. Mix with your hands, pressing and turning the mixture repeatedly to help coax it together.

    ¼ cup almond meal, ¼ cup coconut flakes, 1 tablespoon dried cranberries

  • On a clean work surface, lay out a long piece of plastic wrap. Shape the mixture into a log about 2 inches in diameter and 9 inches long. Sprinkle the shredded coconut onto the plastic wrap and roll the log until coated, pressing the coconut into the sides.

    2 tablespoons unsweetened shredded coconut
