I just received an Instant Pot for Christmas, but haven’t had a chance to use it. I had looked at different recipes and was frustrated with the directions. You have answered so many of my questions. Thanks so much for giving clear instructions and added tips. I will try some of these recipes in the next week.

I love the way you describe how to use the instapot and also how you reply to those who have questions. So I have a question about my recent purchase. The interior stainless steel lining is not flat. The center is higher which means the oil surrounds it and unless much oil is used the meat sticks on the surface not covered. Is it normal for the instapot to be high centered? Thank you.

Hi Vickie, yes, the pot is domed in the center bottom. All of the electric pressure cookers I have seen are this way. What I do is this: when the pot reads HOT, that's when I add the oil. Then I pick up the inner stainless liner and swish the oil around to coat the center, and add my food right after doing that.
